Would this fit a toilet with holes measuring 160mm from centre to centre?

Hinge Centres (Min) are 115.0mm. So, unfortunately, it will not fit.

Can the top fixing be adjusted, i.e., where the small metal lugs go in the holes on the toilet seat? As mine is 16cm, and cannot seem to find the measurement.

The hinges on the toilet seat are not adjustable and are 115mm centres.

Does the Lauren Toilet seat fit the Cooke and Lewis Fabienne toilet? It looks very much like it, and as I expect it is non-returnable, I would need to know before purchase.

Before ordering, you must double-check the sizes of your existing seat and cover. This seat measures: Width 360mm x Depth 432mm, and the Hinge centre is 130mm.
