Is a version of this tap available without the Eco Start? We do not have a combi boiler, and I do not want the centre position to give cold water.

Unfortunately, the Bristan Gild tap is only manufactured with the ECO start included. We do offer a number of taps from Bristan and other brands that do not offer eco start, so we would advise you to have a look through other ranges on our site.
